What's specific about Duchesse de Bourgogne?

Red ales are aging in huge barrels of unlined oak. The Duchesse is aging in old barrels of Bourgogne. The wood which can't be sterilized is home to dozens of wild yeasts and bacterial strains that attack the residual sugars. Over the course of aging, the beer takes on its characteristic acidity along with oak flavors and colors. These beers are usually blends of young and aged beers.
